A tasty dish for Easter Brunch!
1/2 cup diced sweet red or green pepper
1/2 cup chopped onion
2 tablespoons olive oil
3 eggs
1/2 cup milk
1 cup chopped cooked ham (or chicken)
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/2 cup shredded part-skim mozzarella cheese
1 tablespoon grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon pepper
In a large skillet, sauté the pepper and onion in oil until tender.
In a large bowl, beat eggs and milk.
Stir in the ham, 1/2 cup spinach, mozzarella and Parmesan cheeses, salt and pepper (save remaining spinach for another use).
Add to the skillet. Cover and cook over medium heat for 7-10 minutes or until a knife inserted in the center comes out clean.
Cut into wedges and serve. Enjoy!
